Watermelon things...


Despite popular belief that watermelon is made up of only water and sugar, watermelon is actually considered a nutrient dense food, a food that provides a high amount of vitamins, minerals and antioxidants for a low amount of calories.
Watermelons have become synonymous with summer and picnics, and for good reason. Their refreshing quality and sweet taste help to combat the heat and also provide a guilt-free, low maintenance dessert for kids and adults alike to enjoy.

So here are some of my favourite thing to make with watermelon....just because the expert say it's healthy!

Watermelon Sorbet

Serves 4

Prep time 15 min

Total time - 30 min (+ time to freeze)


INGREDIENTS

  • 4 cups watermelon puree (which is about 5 lbs of watermelon blended)
  • Juice and zest of half a lime
  • ¼ cup sugar
  • ½ cup light corn syrup
  • 2 Tablespoons Campari
MAKING THE SORBET
  • Heat 1 cup of the watermelon puree with the sugar, whisking until the sugar dissolves.
  • Add the rest of the puree, the lime and the corn syrup and whisk to combine.
  • Take the puree off the heat and add the Campari.
  • If you have an ice cream maker, pour the mixture in and proceed according to its instructions. Otherwise, pour the mixture into a plastic container and freeze for 4 hours (or overnight).
  • Let the frozen mixture stand at room temp for a few minutes to soften slightly, then process (or blend) and freeze again.

Watermelon Granita with Ginger and Lime

Serves 4-6

Total time - 3 hours

INGREDIENTS
  • 1/4 cup fresh lime juice
  • 6 cups roughly chopped seedless watermelon
  • 1/2 cup sugar
  • zest from 1 lime
  • 1 (2-inch) piece of ginger divided, 1 inch cut into coins and 1 inch peeled and grated
  • fleur de sel, for garnish
INSTRUCTIONS
  1. In a blender or food processor, blend together the lime juice and watermelon. Strain through a strainer, reserving liquid and discarding the solids.
  2. Put 1/2 cup of the watermelon water in a saucepan and add the sugar, lime zest and ginger coins. Bring the liquid to a simmer and cook until the sugar has dissolved. Set aside to cool.
  3. Add the grated ginger to the remaining watermelon water. When the syrup is cooled, remove the ginger and mix the syrup into the watermelon water. Pour into a 9×13-inch baking dish and set in the freezer.
  4. Every 30 minutes, scrape the mixture with a fork to break up the ice crystals and to keep it light and fluffy. Scrape every 30 minutes for at least 2 hours.
  5. Scrape the granita into glasses and garnish with the fleur de sel.

Watermelon Ice

Prep time 5 minute

Total time - 2 hours, 5 minutes

INGREDIENTS
  • Watermelon, cut into cubes
  • Water, sparkling water, soda water, lemon / lime soda, lemonade (according to preferences)
INSTRUCTIONS
  1. Cut watermelon into small cubes. Lay in a single layer on a baking sheet and place in the freezer. Once frozen, store in a freezer safe ziptop bag.
  2. Fill a glass with the watermelon ice and pour your favorite beverage over.
